Molten Chocolate Lava Cake Recipe



1/2 cup Coconut Oil
6oz Dark Chocolate
2 large Eggs
2 Egg Yolks
1/2 cup Coconut Sugar
6 tablespoons Unsweetened Cocoa Powder
1/8 teaspoon Salt
1 pint Dairy-Free Peppermint Crunch Halo Top
2oz Dark Chocolate, melted (for drizzling)
2 tablespoons Crushed Candy Canes


Step 1

Preheat your oven to 400 degrees.

Step 2

Spray 4 ramekins with cooking spray and then sprinkle with cocoa powder until the insides are fully coated.

Step 3

In a large bowl, microwave the coconut oil and dark chocolate at 20-second intervals, stirring between each one, until completely melted.

Step 4

In a medium-sized bowl, add the eggs, egg yolks, and coconut sugar. Whisk vigorously for 30 seconds. Then, whisk in the cocoa powder, vanilla extract, and salt.

Step 5

Scoop batter into the prepared ramekins.

Step 6

Bake for 11-13 minutes, or until the edges are set and the center looks shiny and underdone. Remove from the oven and let cool for 1 minute. Place a plate on top of a ramekin, then flip them both (ramekin and plate together) so the cake flips gently out onto the plate.

Step 7

Scoop the Halo Top on each of the cakes, sprinkle with crushed candy canes, then serve and enjoy!
